Lots and lots of lemons.
So we've been making lots of lemon honey - recipe below.
And lots of lemonade concentrate - this recipe.
What we can't eat and drink now is going in the freezer. I do love a well stocked freezer.
I love this recipe because it's so quick and simple. No double boilers or constant stirring.
:: Microwave Lemon Honey ::
(I don't remember where I got this recipe from).
- 3 large lemons
- 200g sugar
- 80g butter
- 3 eggs
Place finely grated rind and juice, sugar and butter in a bowl. Microwave on high for 3 minutes. Whisk the eggs and whisk into the lemon mixture. Microwave for another couple of minutes until thick, stirring after each minute (will thicken more as it cools).

lovely lemons indeed! We have been making lemon cordial syrup today - so wonderfully refreshing and a wee bit naughty too!xx
It's also really nice with ice cold soda water or that 'soda-with-a-touch-of-lemon' put out by S##++@^*es (no brand names here!!)
Oh perfect, thanks for this post. : ) Today we picked three lovely lemons from our lemon tree at the new house and was looking for the lemonade recipe that we had last year. I can use yours instead.

I've never tasted lemon honey but this looks heavenly. I imagine it is particularly wonderful to have on hand in the winter months when coughs and sore throats are knocking at the door. So nice to meet you.
