I quite like quiet Sunday afternoons. We'd been to church in the morning , then the kids had a good sleep each.
I made these for afternoon tea.

Peanut butter mini muffins. They have no butter and no sugar.
(So I didn't feel so bad about eating lots of them.)
:: Peanut butter muffins ::

- 1 3/4 cups flour
- 2 tbsp ground flax seed
- 4 tsp baking powder
- 3/4 tsp salt
- 1/2 cup peanut butter
- 1/4 cup honey
- 1 1/2 cups milk
- 1/2 cup chocolate chips
Mix the dry ingredients with the peanut butter in a mixer or with a fork until it resembles breadcrumbs. Mix in the honey and the milk, then add the choc chips and beat well.
Cook at 180 c for about 20 mins.

Yum, well thats good BOTH those recipes have chocolate in them!
They are a variation on the 'haystacks' grandma used to make only hers had condensed milk to bind and mixed dried fruit. I did not like them!Quite sure they would have been vastly improved with chocolate!!
