Just a bit more Springness

I know I keep going on about the weather, but really it is worth going on about. I love Spring, it's my favourite season. It's so bright and cheerful, especially after the grey and damp of winter. I love it how sweet smelling little flowers pop up everywhere, showing their faces in peoples gardens and lawns and on the sides of the roads. Then there's little lambs being born and frolicking around in the yellow sunshine. And the fruit trees are all starting to blossom and everything just looks so fresh and green. What's there not to love! God's creation in it's finest I think. Even the birds seem to be chattering louder and more happily.
The kids are loving it as much as I am, Liam's cabin fever has well and truly gone, fortunately.
We've just been outside to say hello to our first daffodil flower.



Beautiful (though I hate to say it but I've just looked out the window now and it has mysteriously, or not so mysteriously dissapeared! I think it make have been plucked and chucked - Liam!) But anyway, fortunately we have plenty more on the way. Perhaps we won't go and say hello to the next one.
The weather of course invited us to stay and hang out for a while on the lawn.

We practiced our crawling



And felt the cool grass on our toes



And filled the watering can with grass clippings



And picked some daisies to bring inside

Aahh, Spring.

Before I go, just another cookie to review.

Date and oat cookies, these ones are really good, I'm not going to tell you how many I've just eaten. The recipe called for 1 large egg but I only had medium-ish eggs so I put 1 1/2 in, but the mixture seemed a bit dry so I threw the rest of the egg in. I'm not sure if it's because of my extra egg but they are slightly macaroon-like.

Here is the recipe

:: Date and Oat cookies ::

1 1/2 cups flour
1/2 tsp baking powder
1/8 tsp salt
1/2 cup (125g) butter, cut up
1 large egg lightly beaten
1 cup sugar (I only put 3/4 cup in and it was heaps)
1/2 cup rolled oats
1/2 cup chopped dates

Mix the dry ingredients together and chop the butter in with a pastry blender till it resembles fine crumbs. Add the egg beating until just blended. Mix in the sugar, oats and dates. Put balls of the mixture onto a greased tray and flatten a bit with the back of a fork. Bake at 180 c for 12 - 15 mins until lightly browned.

But now I think I need to start making less cookies and going for more walks.
