Father's Day

Happy Father's Day for yesterday to the fathers in my life. My dad, my dad-in-law and my wonderful husband. You're the best set of dads anyone could ever wish for.

I made Aaron waffles and fresh coffee for breakfast on behalf of the kids who of course had no idea what was going on - but they enjoyed the waffles anyway.

As well as waffle making there's been some bunny making.

I made this for a little friend who was celebrating her first birthday on Saturday. I forgot to take any pictures of it so I snapped this one in the car on the way there. I have two more half completed - one for Isla and one for the shop, so I will take some better photos of them later.

Today it is rainy and cold again, what happened to my Spring! So we've made banana muffins and hung out inside.

I can't remember where I got this recipe from, I found it on a scrap of paper during another spring cleaning bout in the weekend. They are really tasty and a bit healthier than some of the cookies I've been making lately.

:: Banana nut muffins ::

1 1/2 cups wholemeal flour
1/2 cup sugar
1 tsp baking soda
1/2 tsp salt
3/4 cup ground flaxseed or oat bran (I did half of each)
1/2 cup chopped walnuts (I did raisins so Isla would be happy eating them)
2 mashed bananas
1/3 cup olive oil
1 tsp vanilla extract
2/3 cup milk

Mix the dry ingredients together then add the mixed wet ingredients stirring until just blended, don't over mix. Then bake at 180 c until golden and when you push on the top they bounce back - about 15 mins.

the waffles look yum, have you a heart shaped waffle iron? Is it old?.The rabbit is just gorgeous what a lovely present to give. Alice will be one this month, it breaks my heart!I wish it would take two years before their one.
