My favourite muffin recipe

It's raining outside and we're having a cozy relaxed Sunday afternoon here. I've just mixed up a batch of my favourite muffins, they're just cooking in the oven. I thought I'd share the recipe. These muffins are hearty and moist. I find most muffins tend to dry out quickly and are best eaten the day they are made, but not these ones, they stay moist and fresh tasting for a number of days.

:: Banana bran muffins ::

- 2 cups plain flour
- 1 1/2 cups bran
- 1 Tbsp each cinnamon and baking powder
- 1 tsp ground ginger
- 1 cup milk
- 3 Tbsp each butter and golden syrup
- 1/2 cup brown sugar
- 1 tsp baking soda
- 2 ripe bananas

Combine flour, bran, cinnamon, baking powder and ginger. Heat milk, butter, golden syrup and sugar until butter has melted and sugar dissolved. Stir in baking soda and mashed bananas. Add to dry ingredients mixing just to combine. Do not over-mix. Spoon into twelve greased muffin tins and bake for 15-20 mins at 190 c.
(You can also substitute the banana for 1 1/2 cups grated apple or other fruit.)

Yip, they are good.
The boys love them, and they dont even have choc in them, the horror! (I used wholemeal flour instead of bran, because I discovered half way thru making them that I did'nt have any, drat)

yum - got to go find some ripe bananas now cos my lot eat them before they even ripen - I think the dairy gives them away if they get a bit ripe - so going for a walk now to hunt for some...
